Job Description
Position Summary
Rixos Phu Quoc Viet Nam is seeking a dedicated and hands-on Stewarding Team Leader to support the day-to-day operations of the Stewarding Department. Reporting to the Chief Steward, this role ensures the highest standards of cleanliness, hygiene, safety, and operational efficiency across all kitchen and F&B back-of-house areas, while fostering a positive and professional working environment.
Key Responsibilities
Stewarding Operations
- Supervise daily stewarding operations to ensure all kitchen and service areas are kept clean, organized, and hygienic at all times.
- Ensure proper cleaning, washing, and storage of dishes, glassware, utensils, pots, pans, and kitchen equipment in accordance with established standards.
- Oversee garbage disposal procedures and ensure waste areas are maintained according to hygiene and environmental standards.
- Ensure opening and closing procedures for stewarding areas are strictly followed.
Equipment & Inventory Control
- Ensure proper handling and care of all operating and kitchen equipment to minimize breakage and loss.
- Assist in conducting monthly, quarterly, bi-annual, and annual inventories of operating equipment.
- Monitor usage of cleaning chemicals and supplies to reduce wastage and spoilage.
- Maintain full knowledge of dishwashing machines, cleaning procedures, and chemical usage.
Hygiene, Safety & Compliance
- Ensure full compliance with HACCP standards, food safety regulations, and local legislation.
- Work closely with the Hygiene Officer to implement and monitor hygiene and sanitation procedures.
- Adhere to Rixos ISO Integrated Management Systems, including Quality, Environment, Health & Safety, Food Safety, and Guest Complaint Management (ISO 9001, 14001, 22000, 10002).
- Ensure all stewarding team members follow hygiene, safety, and appearance standards at all times.
Team Leadership & Training
- Supervise and guide stewarding team members during shifts, providing on-the-job coaching and support.
- Ensure team members are properly trained and follow established SOPs and operational standards.
- Attend and actively participate in departmental and hotel training sessions and meetings.
- Maintain good working relationships with kitchen, F&B, housekeeping, and other hotel departments.
Service & Guest Support
- Provide courteous, professional, and flexible service in support of all F&B operations.
- Report guest complaints or operational issues promptly to supervisors and ensure proper follow-up.
- Remain flexible to rotate within F&B or other departments when required by operational needs.
General Duties
- Ensure punctual attendance, correct uniform, name tag, and high standards of personal hygiene.
- Comply with hotel policies, employee handbook, and procedures related to Fire, Health & Safety.
- Undertake any reasonable tasks or additional duties as assigned by the Chief Steward or Stewarding Management.
- Be flexible to support redeployment or extended duties during peak business periods.
Qualifications
- Previous experience in stewarding or back-of-house operations within hotels or resorts preferred.
- Prior supervisory or team leader experience is an advantage.
- Good understanding of hygiene, cleaning procedures, and safe use of chemicals.
- Knowledge of HACCP and food safety standards is preferred.
