We're looking for a Head Bartender to bring their energy and expertise to the Lotti's team. It's an exciting time to join us: this summer, we're giving the space a fresh new look, and the bar especially is getting a glow-up. If you want to be part of shaping that next chapter, read on.

Lotti's is our buzzing neighbourhood restaurant and the living room of Amsterdam. The menu features internationally inspired brasserie-style cuisine made with fresh, locally sourced ingredients. Throughout the day, Lotti's is the perfect place to meet, relax or work, with guests enjoying high-quality coffee, a curated pastry selection and an all-day dining menu in a welcoming, laid-back atmosphere.

As the day transitions into the evening, so does the energy. From 5pm onwards, the bar comes to life as guests gather to soak up the vibrant atmosphere, connect with friends and enjoy our seasonal signature cocktails. From Friday to Sunday, local DJ talent sets the soundtrack, making Lotti's the destination for great drinks, great music and memorable moments in a relaxed yet lively setting.

Once the Mayor’s home, now our home, on Amsterdam’s Herengracht canal. The Hoxton, Amsterdam houses 111 rooms, The Apartment, our meetings & events concept, and our all-day restaurant & bar, Lotti’s.

Job Description

What you’ll do…

• Create a fun and relaxed atmosphere where guests come to wind down and enjoy themselves.
• Make whatever the mood calls for, from soft drinks to masterful cocktails that change with the seasons.
• Create and develop seasonal signature cocktails that capture Lotti's spirit, blending creativity with the latest beverage trends.
• Keep our operational and service standards sharp and consistent, shift after shift.
• Work with the rest of the team to keep things running smoothly and tidily.
• Lead inventory management and keep cash control tight and on point.
• Champion HACCP compliance - hitting food safety and hygiene targets and keeping things spotless behind the bar.
• Train, coach, and develop bartenders, fostering a culture of learning, accountability, and exceptional guest service.
• Handle the accounting and admin side of things, keeping reports accurate and on time.
• Support the Bar Manager in pushing innovation, raising the bar (pun intended) on performance, and delivering memorable guest experiences through creative beverage programming and activations.
