Job Description

    1.  
  • Responsible of Checking all Meat and Fish on delivery for quality and Quantity.
  • In charge of cleanliness of the Meat and Fish preparation rooms and proper storage of all Meat and Fish items in the Freezers and Fridges.
  • The Butcher must be fully aware of the company controlling and food preparation procedures e.g. portion control, as outlined in the F&B manual.
  • Properly measures and portions all food items. Complies with all portion sizes, quality standards, department rules, policies and procedures.
  • Assist the Head Chef with menu preparation and ensuring adequate supplies are available for expected service.
  • Planning, preparation and execution of high-quality food offerings for various conferences and events.
  • Supervision of kitchen in the absence of the Head / Sous Chef.
  • Maintain excellent presentation standards and cost control for all food and beverage outlets, whilst maintaining recipe standards.
  • Ensure strict stock rotation and minimum wastage. Have stock control procedures implemented and maintained.
  • Keep all working areas clean and tidy & ensuring all equipment is maintained, serviced and cleaned to WHS standards.

Qualifications

  • Proven experience in a Cold Kitchen role.
  • A culinary degree or relevant certification is a plus.
  • Strong knowledge of food safety, hygiene, and cleanliness standards.
  • Ability to prepare recipes and manage market orders using the FutureLog system.
  • Ability to work under pressure and in a fast-paced environment.
  • Attention to detail and a passion for creativity in food presentation.
  • A team player with excellent communication skills.
