Job Description

Your Role in the Story 

As the Bar Manager at LUURA, you will lead the beverage experience across the property, managing our bars and the beverages of our signature restaurants — Mimi Kakushi and LENEA (all-day dining). You are the guardian of every drink moment, ensuring that each guest interaction reflects RIKAS' lifestyle-led, detail-driven approach and the unique, creative standards.

This is a hands-on leadership role where you will guide, train, and inspire your team, support Rikas'  restaurant operations from a beverage perspective, and deliver exceptional, memorable experiences across all outlets.

Key Responsibilities 

  • Lead the full daily operation of the bar, ensuring service excellence, consistency, and efficiency at all times. 
  • Act as a visible, hands-on leader during service across shifts, coaching the team and supporting peak operations. 
  • Build, train, and inspire a high-performing bar team, fostering professionalism, ownership, and growth. 
  • Embed RIKAS guest experience philosophy across all bar touchpoints. 
  • Ensure all team members demonstrate strong product knowledge across cocktails, spirits, wine, menus, and allergens. 
  • Manage staffing schedules in line with operational needs, budgeted labor costs, and local labor regulations. Plan proactively the staff needs per shift and align your teams accordingly. 
  • Oversee stock management, inventory control, ordering, breakage monitoring, and cost control. 
  • Maintain high standards of cleanliness, organization, and equipment maintenance in collaboration with Hygiene, Housekeeping, Engineering, and Stewarding. 
  • Handle guest feedback and complaints with confidence, empathy, and effective service recovery. 
  • Monitor financial performance, follow accounting procedures, and support revenue optimization initiatives. 
  • Maintain accurate operational logs, handovers, and performance records. 
  • Build relationships with regular guests, capturing preferences and creating personalized experiences. 
  • Ensure full compliance with health & safety, food hygiene, fire safety, licensing requirements, and RIKAS SOPs. 
  • Contribute to cocktail development, menu engineering, and seasonal activations in collaboration with the wider F&B team 
  • Manage all aspects of the bar team operations, including CVs filtering, hiring, onboarding, SOP and training manuals development, and shift control. 

Qualifications

Who We’re Looking For 

  • Minimum 3 years’ experience in a Bar Manager or senior bar leadership role within an upscale, fast-paced hospitality environment. 
  • Strong background in bartending, mixology, menu creation, and wine & spirits (WSET certification is a strong plus). 
  • Proven leadership experience with the ability to motivate, train, and develop teams. 
  • Experience in pre-opening operations will be considered as a plus. 
  • Excellent communication, organizational, and problem-solving skills. 
  • Strong commercial awareness with an understanding of cost control and inventory management. 
  • Fluent in English; additional languages are considered a plus. 
  • Eligible to work in (EU) countries. 
  • High standards of personal presentation and professionalism. 
  • Solid knowledge of health & safety, food hygiene, first aid, and emergency procedures 
  • Naturally warm, approachable, and attentive to guest needs, leading by example on the floor. 
  • Hands-on, results-oriented, and proactive in managing multiple F&B outlets and teams. 
  • Committed to creating exceptional, memorable guest experiences that reflect brand values. 
  • Comfortable working in a fast-paced, people-first environment, balancing operational demands with team development. 
  • Passionate about hospitality, culinary trends, culture, and the art of service.
