We are looking for a Director of Culinary to join the pre-opening of SLS The Red Sea.

Ennismore, with its luxury brand SLS Hotels, is currently opening a magnificent project in the oasis that is The Red Sea. SLS The Red Sea is planned to open in 2025.

Introducing the newest gem of dazzling luxury to reach The Red Sea project: resort offers 150 luxurious keys, complemented by an impressive array of 7 distinct Food & Beverage outlets and a rejuvenating spa sanctuary. Catering to both adults seeking a getaway and families craving connection and some adventure, this hotel brings a wonderland of extraordinary experiences to The Red Sea, providing an array of amenities and activities tailored for travelers of all ages.

Job Description

  • Oversee all culinary of pre-opening and operations including kitchen staff.
  • Responsible for the entire Food & Beverage Department including Administration, Service and Kitchen.
  • In conjunction with the General Manager set and understanding objectives ensuring, implemented.
  • Ensures a high customer satisfaction through training, motivation, implementing and maintaining standards, with a “hands on” approach.
  • Maintains a positive and healthy work environment.
  • Respectful of the local cultural environment while maintain the expectations of an international branded hotel.
  • Ensures the efficient, effective and smooth running of the operation.
  • Develop and implement innovative menus and recipes.
  • Ensure the highest standards of food quality and presentation.
  • Manage food sourcing and inventory control.
  • Maintain compliance with health and safety regulations.
  • Collaborate with other departments to enhance the dining experience.
  • Train and mentor kitchen staff.
  • Monitor and control food costs and budgets.
  • Implement and maintain kitchen policies and procedures.
  • Conduct regular performance evaluations of kitchen staff.
  • Ensure proper maintenance and cleanliness of kitchen equipment.
  • Stay updated on industry trends and best practices.
  • Develop and implement strategies for continuous improvement.
  • Handle customer feedback and resolve any issues.
  • Plan and execute special events and catering services.
  • Ensure efficient and effective kitchen operations.
  • Foster a positive and collaborative work environment.
  • Manage vendor relationships and negotiate contracts.
  • Ensure compliance with company policies and standards.
  • Prepare and present reports on culinary operations.

Qualifications

  • 10+ year operational management experience in Culinary.
  • F&B Service.
  • Strong leadership, interpersonal and training skills to lead a large team.
  • Knowledge In HACCP and managing food waste.
  • English proficiency.
  • Strong communication skills.
