Job Description
We are seeking a skilled and creative Sushi Chef to join our culinary team in the beautiful island of Phu Quoc, Vietnam. As a Sushi Chef, you will be responsible for creating exceptional sushi and Japanese cuisine, ensuring the highest standards of food quality and presentation.
- Prepare and serve a variety of sushi dishes, including nigiri, maki, and speciality rolls
- Ensure the freshness and quality of all ingredients, with a focus on locally sourced seafood
- Maintain a clean and organised workspace, adhering to food safety and hygiene standards
- Collaborate with the kitchen team to develop new menu items and seasonal specials
- Train and mentor junior chefs in sushi preparation techniques
- Manage inventory and place orders for necessary ingredients and supplies
- Interact with guests, providing information about menu items and preparation methods
- Adapt traditional Japanese techniques to incorporate local Vietnamese flavours and ingredients
Qualifications
- Minimum 3-5 years of experience as a Sushi Chef in high-volume restaurants
- Exceptional knife skills and proficiency in various sushi preparation techniques
- In-depth knowledge of Japanese cuisine, culture, and dining etiquette
- Strong understanding of food safety practices and current health and hygiene regulations
- Ability to work efficiently in a fast-paced environment whilst maintaining attention to detail
- Excellent communication and teamwork skills
- Creativity and passion for developing innovative sushi dishes
- Proficiency in operating and maintaining kitchen equipment
- Culinary degree or diploma preferred
- Current food safety certification
- Familiarity with local seafood and ingredients in Phu Quoc, Vietnam is advantageous
- Ability to speak English; knowledge of Vietnamese or Japanese is a plus
